Most of us think of salt as a basic seasoning. Arguably the most common seasoning, but the development of salting to preserve fish and meat and all kinds of foods may have been the single most important discovery that allowed humankind to survive harsh winters in colder climates.
In place of your home-made blend, this recipe could be made with one of the commercial herbed sea salts. The author can recommend Woody’s Gourmet* – 1957 Milestone Blend which includes organic sage and garlic in addition to rosemary.

Rosemary Sea Salt
Make Your Own Herbed Sea Salt
1 Tbsp fresh rosemary2 Tbsp good quality coarse sea salt, or to taste

If you have a rosemary growing in your garden (or your neighbor’s) you can easily make your own rosemary sea salt. The same process could be used with other herbs. Make up a small batch initially to see if you like it. When you hit on a mixture you like, make it up in larger batches. Herbed Sea Salt can make a great gift for your foodie friends.
6 medium Yukon Gold potatoes1 Tbsp plain Sea Salt (or Kosher Salt)Canola oilOlive oilRosemary Sea Salt to taste
Bring a large pot of salted water to boil.Fill a large bowl with about a quart of water and plain Sea Salt.Slice potatoes ¼ inch thick. As you slice them, immerse them in the bowl of salted water.When all the potatoes have been sliced, drain and add them to the pot of boiling water. Cook until firm-tender, about 6-8 minutes.Drain and let the potatoes cool completely. (The recipe can be made ahead to this point.)Heat the oven to 175° F.To the largest skillet you have

, add equal amounts of canola and olive oil to a depth of ¼ inch. Heat the oil over medium-high flame until a bread crumb dropped in browns in about 20 seconds.Dry the potato slices and carefully add a single layer of them to the skillet. Fry until they are golden brown

This mixture is a natural for potatoes (recipe follows.) or press it into the surface of lamb chops before your cook them. Use only good quality sea salt for the mixture. La Baleine is a good brand, widely available. Of course, organically grown herbs are preferred. The best way to control that is to either grow them yourself or buy from a farmer you trust at a farmer’s market.
