Preheat oven to 350 degrees.Finely chop rosemary.Spray oven safe dish with olive oil.Add pork to oven safe dish.Coat pork with rosemary, salt and pepperPlace pork dish in oven. Cook pork until internal temperature reaches 160 degrees (approximately 30 minutes)
Preheat oven to 400 degrees.Wash and dry sweet potatoes. Puncture sweet potato to aerate.Wrap each sweet potato in tin foil.Place sweet potatoes in oven safe dish. Bake until thoroughly tender (approximately 55 to 60 minutes).Roughly chop sweet potatoes.Add sweet potatoes to food processor.Process until sweet potatoes are smooth in texture.Add butter, cinnamon and cayenne pepper. Process mixture until remaining ingredients have been incorporated.
