Form the kebabs by placing a spoonfull of mince mix in the hand and closing the hand to form a fist. The kebabs are then shaped to form their characteristic shape - an oval shaped meatball. Once all the kebabs have been shaped fry them on low heat in a lightly oiled pan till a brown crust forms. Add cream to the masala mixture and the reserved dill. Mix well. Next add the masala mixture to the kebabs. Cover and cook on low till the kebabs are cooked through. Garnish with slivered almonds and cilantro leaves. Serve with rice or flat bread.
Masala or Gravy
Muthi KebabsIngredients1 lb minced beef1 Large onion diced fine1 Tablespoons ginger paste1 Tablespoon garlic paste¼ Cup chopped fresh dill1 Teaspoons mint (dried or fresh)11/2 Teaspoons salt1 Teaspoons garam masala1 Teaspoons cumin powder1 Teaspoons red chili powder2 Tablespoons lemon juice2 Tablespoons Yoghurt½ Cup vegetable oil1 Tablespoon Tomato paste1 Tablespoon heavy cream1 Teaspoon slivered almonds lightly toasted¼ Cup gram flour3-4 Green peppers choppedPreparation
The beef mince should have a fat content of 15-20 % and should be minced fine. Break up or crumble the mince then add 2 tablespoons of the chopped onion and reserve the rest. Add a teaspoon each of the ginger and garlic pastes. Next add the dry spices – garam masala, chili powder, cumin powder and salt. Mix the ingredients gently with the mince. Add the yoghurt and the gram flour and fold it into the mixture. Next, add ½ teaspoon of the mint and half of the chopped dill to the mixture along with the green peppers. Green peppers are optional and may be omitted for a milder recipe. Set aside.
The word “Muthi” translates as fist. The kebabs are so named because they are formed by placing the kebab mixture in the hand and then closing the hand to form a fist. These kebabs are a form of meatballs and use spices found in the typical Indo/Pakistani kitchen. The recipe is a popular mughlai dish sometimes also served as a comfort food in winter when it is served with soft, hot [link widoczny dla zalogowanych], clumpy rice. The following recipe uses beef but these kebabs can be made using minced chicken, turkey or mutton.
